What you need

  • 2 pieces of salmon fillet with a total weight of about 400g
  • 1 container of sweet cream (250ml)
  • 3 tablespoons grated Parmesan cheese
  • 25g butter
  • 2 tablespoons olive oil
  • 2-3 cups water (450ml)
  • Salt to taste

  • Preheat oven to 200 degrees.
  • Grate 3 tablespoons Parmesan cheese.

1. How to prepare the fish

Arrange the salmon baking tray and brush the olive oil on all sides of the fish.
Sprinkle the Tuscan seasoning over the fish and bake for 12 to 15 minutes.

2. Melting the butter

Heat a pan over medium heat and add the butter and mix lightly until dissolved.

3. Cooking the rice

Add the rice to the pan and mix, moving on to the next step when the rice gets a translucent hue.

4. Rice seasoning

Gradually add a glass of water and while stirring, add a little salt (recommend 3/4 teaspoon).

5. Water adding

Each time the water is absorbed into the rice, add water again until a risotto texture is obtained (al dente – a little hard – a little before full cooking – around 15 minutes).

6. Add sweet cream + grated cheese

Finally add sweet cream and parmesan, mix and cook for another 2 minutes.
Transfer to a serving plate, place the salmon next to the risotto and serve.

Chef's Tip!

Stir the risotto often - so that it does not stick to the pan.
It is recommended to add Parmesan chips over the risotto near the serving.
